What is Roast Beef without roast potatoes on the side? Some cultures have Yorkshire Pudding, others have mashed potatoes…………..we got My Momma’s Potatoes!! Nothing is finer!! These are now handed down to our generation from Momma Pirc. I have to say, she still makes them better than me, because I take a bit of creative license. When Momma Pirc says she will make her potatoes, we never say no!
Here’s the recipe:
1 shallow roasting pan
parchment paper to cover the roasting pan
5-6 medium size yellow flesh potatoes, cut into small pieces, peeled or not, either is fine
2-3 Tbsp olive oil
1 Tbsp paprika
1 tsp garlic powder (NOT garlic salt)
1 tsp onion powder (NOT onion salt)
salt and pepper to taste
Chopped Parsley for garnish
In a bowl, mix together potatoes, oil and add dry ingredients. Mix gently with you hands to ensure all the potatoes pieces are coated with the oil and spices.
In a pre-heated oven of 425 degrees, place the roasting pan into the oven, and bake for 45 -50 min. The potatoes should have the edges go crispy.
Bring them out of the oven, let rest for about 5 min. Place on a plate, and sprinkle chopped parsley for garnish. Enjoy!
