The crispness in the air signals that summer is coming to an end………..As sad as that may be, it makes me think of winter comfort foods.  Until I got married, I have to admit, I never made any soups.  My mom made soup regularly, and I loved them as a kid.   Now, I have learned to love to make homemade soups from scratch.  Here is one of our favourites!

2 tbsp oil

2 heaping tbsp chopped garlic

1 medium sweet onion, diced

1 medium size butternut squash, peeled, seeded and cubed

2 medium carrots, peeled and cut

3 celery stalks

1 medium pepper, chopped

1 medium potato

1 medium sweet potato

6 cups water

3 bay leaves

3 tsp vegetable seasoning (like Vegeta)

salt and pepper to taste

 

In a large soup pot, heat oil, add all vegetables and bay leaves, on medium heat and over.  Allow the vegetables to soften. then add water and vegetable seasoning.  Bring to a gentle boil on medium heat. When boiling, remove the bay leaves.

Using either a hand held blender until mixture is smooth or using  a blender, transfer small amounts of vegetables and liquid pulsing to smooth texture.  Place the soup into a new soup pot.  Once the vegetables are smooth, bring to a boil and return the bay leaves to the mixture.   Add salt and pepper to taste.

Serve with a fresh loaf of hot crusty buttered bread and if you like a dollop of creme fraishe or sour cream.
