I am all about great tasting recipes from scratch using quality ingredients. With the summer here, what better time to use the freshest of ingredients. Thanks to my mom’s great cooking skills, she taught me to do Beef Stroganoff, but without SLAVING over a stove all day. Hope you enjoy with incredibly easy, and delicious recipe!
2 medium size top sirloin steaks, trimming fat, cut in strips.
2-3 tbsp good quality oil for cooking
1 large pepper, diced,
1 package sliced fresh white mushrooms, cut into smaller pieces
1-large can (26 oz) diced tomatoes (with no additional spices)
2 rounded tbsp flour or cornstarch
2 cups water
salt and pepper, to taste
1/2 cup sour cream
parsley, finely chopped
Using a large deep fry pan, warm up your oil . When hot, pan should be very hot, put strips of steak, let it brown on all sides. when steak is cooked, add in diced peppers, mushrooms, and let cook for 2 min. Stir regularly, don’t let it burn. add in the tomatoes with the juice. Stir in well. Add salt and pepper to taste. Lower the temperature to medium heat.
In a large glass, mix flour with water. Ensure it is mixed well. Pour into the pan. Mix well, ensure the liquid comes to a boil. If it doesn’t boil, you will taste the flour (not the taste are going for!!)
Once it has gently bubbled up, take it off the heat.
Mix in the sour cream until well blended. Sprinkle finely chopped parsley on the plate.
Serve with no yolk noodles, mashed potatoes or white rice.
