I just love quinoa.  The nutty soft flavour is such a wonderful addition any meal.  I tried it in this easy to make meal.

My Mediterranean Chicken with Quinoa

1 pkg of boneless, skinless chicken breast, sliced into smaller pieces

2 tbsp olive oil

1 tbsp Vegeta (vegetable seasoning in powder format)

1 tsp ground black pepper

1 tbsp chopped garlic

1 tbsp onion powder

Mix these ingredients to coat the chicken and set aside.  Set oven to 375 degrees.

2 peppers, diced

1 large onion, diced

3-4 celery stalks, diced

Garlic, 1/2 head finely chopped, or 2 tbsp pre-chopped garlic

1 lb fresh mushrooms, chopped into small pieces

1 -28 oz can of diced tomatoes

2 cups quinoa, washed

4 cups water

2 tbsp olive oil for drizzle

garlic for top, 2 tbsp


In a large baking dish put the ingredients in as follows:

quinoa on the bottom, add chicken pieces to bottom in a single layer, then add peppers, onions, celery, garlic, mushrooms, the can of diced tomatoes including the liquid, and water.

Gently mix by hand so everything is mixed in.

Drizzle a little more olive oil, and add a little more garlic (2 more tbsp) to the top.

Cover the dish and bake at 375 for 30 min. Uncover the dish and bake for one more hour.

Serve with Tzatziki and a tossed green salad on the side.

Great for a quick dinner, and super as a lunch time left over.
