I just LOVE hummus!  I have been buying hummus, and it always tastes different, it is always a bit of a guessing game if this one or that one will taste just the way I like it.  So, I’ve been testing out my own recipes for homemade hummus.  I hope you like it, my family is really enjoying!

 

1 can drained chickpeas, save the liquid

1 large TBSP of chopped garlic (3-4 cloves)

2 large TBSP of tahini (sesame seed paste in oil)

1 tsp cumin

1 lemon juice (use real lemon, it make such a difference), without the seeds!

1 tbsp good olive oil

salt and pepper to taste

For garnish and serving, a little more olive oil, paprika or parsley or pine nuts or cilantro

 

Put all the ingredients into a good size bowl, drained chickpeas, garlic, tahini, cumin and olive oil, 1/2 lemon juice. I use a hand held chopper, and make a smooth puree.  You can also put into the blender.  Be sure to have the liquid at the bottom to help the pureeing.  If you find it too thick, add a little of the chickpeas liquid and continue to add lemon juice to taste.  Add a pinch of salt and pepper if needed, to taste.

 

This is all about your taste! If you like it more tangy, add more lemon.  Continue to blend until it is a smooth paste.

 

If you let it sit in the fridge for at least 1-2 hours, the flavours really combine and come out.

 

When serving, make a little well on the top and add a little more olive oil, and sprinkle with paprika or pine nuts or parsley or cilantro (that is to taste which you choose).

It will keep in the fridge for at least a week…………………if it stays in the bowl that long!
